I went on a short road trip this afternoon to Lockhart, TX to eat some barbecue at Smitty’s Market. This is the yard where they keep the wood for the smoker. Just inside the entrance, where you line up to order, there’s a fire on the floor. No grate, it’s just sitting there on the floor without a barrier between it and the customers.
